Spinach Quiche-tata
Real men don’t eat quiche? Well, this is too fre-quichely good to pass up. Crustless, because it’s so tastey a crust can’t even contain the flavour.
Ingredients
1 C egg substitute (Egg Creations original preferred) - or 5 large eggs - or 3 whole eggs + 4 extra whites
500 grams (one medium container) 2% cottage cheese
1 package frozen spinach thawed and drained
¼ C reduced fat (19%) medium or sharp cheddar cheese
pinch cayenne pepper
½ t nutmeg
salt and pepper
hot sauce (optional)
Directions
Preheat oven to 375F.
In blender or food processor, add all ingredients except spinach and cheese. Cream together.
Put spinach and cheese in bottom of an eight inch pie dish. Pour egg mixture over it. Bake 30 to 35 minutes. Allow to set a few minutes before you get your fre-quiche on.
