Sinnamon Tofu with Peanut Sauce
Cinnamon has too many health benefits to count, but you can count on this being a healthy and exotic treat. Remember, tofu can be sinful - or at least taste that way.
Ingredients
For Tofu
1 brick extra firm tofu (low fat variety if available)
2 T cinnamon
½ t cumin (optional)
salt
spray oil
For Sauce
4 T natural peanut butter smooth or crunchy
2 T Splenda - or Truvia - or 1 T agave syrup
½ t cumin (optional)
water
Coconut-Peanut Variation: add 1 T light coconut milk
Directions
For Tofu
Cut tofu in bite size cubes, and season evenly. The bites should be well covered in cinnamon.
Preheat skillet on the stove. Spray with oil or brush with thin layer of oil (preferably peanut or grape seed). Once hot, turn down to medium-high. Add seasoned tofu.
Allow a couple minutes on each side to crisp outer layer. Taste. Do you need more seasonings? Then add ‘em! Turn heat down to medium-low for a few more minutes just to cook through.
For Sauce
If your peanut butter is too hard to blend easily, simply place in microwave for about 20 seconds.
Add 2 T of warm water to start. Add seasonings. Stir well. You may want to sweeten more depending on individual taste.
Depending on desired consistency, add more water. Stir well. If it gets too loose, microwave for 20 to 30 seconds. Mix well. For best results, heat 20 to 30 seconds in microwave before serving.
Perfect with stir-fried or steamed vegetables. And great for a quick supper that you can tell everyone you slaved over.
